Lime liquado

A refreshingly zesty sparkling drink with fresh limes and mint leaves – perfect for summer evenings!


  • 600ml sparkling mineral water, chilled
  • 600ml boiling water
  • 100g caster sugar
  • 6 unwaxed limes
  • A small handful of fresh mint leaves
  • Ice
  • Lime slices


  • Using a potato peeler, peel the zest from all of the limes, leaving as much of the white outer skin as you can. Keep the zest in a bowl for later.
  • Squeeze the juice from the limes into a large heatproof jug, then add the sugar and lime zest. Pour in 600ml of boiling water and stir well until the sugar has dissolved. Leave to cool down.
  • When the sugar and lime liquid is cool, pour it into a serving jug and stir in the sparkling water and fresh mint leaves. Use a spoon to taste a sip – if it’s too bitter add some extra sugar and mix well.

Make it your way

Pour into tall glasses and throw in a few ice cubes and a slice of fresh lime.

Cooks Tips

Try making lemon liquado by using 4 unwaxed lemons instead – or use half lemons, half limes for a zesty citrus mix!
